Chicken Fajita Challenge

Ingredients:
- 2 pcs Chicken Breast
- 1T Oregano
- ½T Garlic powder
- ½T Paprika
- 2t Cumin
- 1-2T Olive oil
- Salt and Pepper to taste
Sauce:
- 2T Fat free yogurt
- 1½T Light mayo
- ½ Bu Cilantro
- 4 cloves Garlic
- 1T Lemon Juice
- Salt and Pepper to taste
Rice:
- 2 cups Long grain/short grain white rice
- 1 cup Bell Pepper (red and green)
- ½ cup Red or white onion
- 1t Salt
- 1t Paprika
- 1t Turmeric
- ½t Cumin
Garnish: (optional)
- Green Onion/ Parsley
Cooking Procedure:
1. Cut chicken into bite sized cubes and marinade chicken with oregano, garlic powder, paprika, cumin, olive oil, salt and pepper and mix thoroughly. Set aside.
2. Cut onion, red/green bell pepper in thin slices and peel the skin of the garlic. Set aside for the flavored rice.
3. In a blender, mix fat free yogurt, light mayo, cilantro, garlic, lemon juice, salt and pepper and set aside.
4. In a medium sized pan, saute or pan fry chicken cubes until golden brown and set aside.
5. Use the same medium sized pan and saute bell pepper, red/white onion. Once onions and bell peppers are cooked, add cooked rice and season with salt, paprika, turmeric and onion.
6. In a bowl or a plate, add the flavored rice and put your cooked chicken on top of the rice. Garnish with the creamy sauce and green onions.
